Shahjeera, because of its robust cumin scent and taste, is often known as cumin, as the name implies. Shahjeera has a good flavour that is often used for biryani or as a seasoning and has an odd, lavish aroma.
It can be used for biscuit flavouring, pickling seasoning, bread bits, etc., and is also a perfect treatment for digestive problems.
The black assortment of cumin seeds is called Shahjeeara (Caraway Seeds). Sometimes used whole, the fruits have a pungent, anise-like flavour and odour that comes from essential oils, often carvone and limonene. In liquors, desserts, curry, casseroles and other foods, Caraway is also used. They have a nice scent, a fragrant taste, a very sharp flavour, and leave a warm feeling in the mouth.
Storage: Store in an airtight stainless steel or glass container in a cool and dry place.
